Tilapia with Italian Herbs and Vegetables

Preparation

Heat 1 teaspoon olive oil in skillet.  Add mushrooms; cook 4 minutes to release liquid.  Add tomatoes and garlic; cook 5 minutes or until tomatoes start to soften.  Add snap peas, cover; cook 5 minutes or until snap peas turn bright green and are tender.  Stir in green onions.  Remove vegetables from skillet; keep warm.  Coat fish filets evenly on both sides with Italian seasoning.  Heat remaining olive oil in skillet.  Add fish; cook 3 minutes per side; in two batches if necessary.  Serve with warm vegetables.
