A Sweet & Creamy Mamey {Gela-Mousse}

Preparation

1. Add the unflavored gelatin to the cold water and allow it to set. Once it sets, place it in the microwave for about 30-40 seconds until it melts.

2. Blend to mamey fruit (only the meaty part, not the skin or the seed) with the three milks at low speed.

3. Add the melted gelatin and keep blending until thoroughly combined.

4. Divide equally amoung small molds or pour in a single large one. Refrigerate for about 5 hours or until it hardens.
