Tuscan Cabbage

Tuscan Cabbage is a staple ingredient in Tuscan country cooking. Also known as "cavolo nero" or black cabbage, it is actually a deep green kale with narrow, palm shaped leaves. Some people have an unfounded fear that this vegetable will be tough and bitter, but this variety of kale is wonderfully tender and mild.
