Have you tried Chinese Eggplant yet? If not, you're in for a treat. Considered to have the most delicate flavor of all eggplant varieties, Chinese eggplants are virtually seedless and deliver a sweet and meaty taste. Surrounded by tender skin, they are perfect for stir-fry or sauté recipes. Chinese eggplants range in color from white to lavender and are generally longer than the darker purple Japanese Eggplant. Although botanically a fruit, they're more commonly used as a vegetable. Available year round, choose Chinese Eggplants that are heavy for their size and have a firm, glossy skin.
