Eggplant, Japanese

One of many members of the nightshade family, Japanese eggplant has a dark purple skin and is cylindrical in shape. Select fruits that are from 5 to 8 inches in length, these will be tender and sweet. Like all eggplant, overly large, well matured fruit will have more bitterness due to the development of the seeds.
