Green Tomato

At the end of summer, the yeild of tomatoes tends to be more green than red.  Green tomatoes, however, are equally desireable and useful! They are unripe versions of larger heirlooms, grape, beefsteak, and plum tomatoes.  Their flavor is palatably acidic and a bit tart, but they sure pair well with a lot of different flavors. Their thick, refreshing flesh provides structure to many dishes. Most commonly, green tomatoes are fried, but their versatility doesn't stop there...
