Poblano Pepper

Also known as the pasilla pepper, the poblano peppers are a dark, deep green color and shaped like a cross between cone and a heart.  The walls of flesh are thick and perfect for stuffing. Poblanos are relatively mild but occasionally pack some heat, closer to the seeds. 

Like other chile peppers, poblanos are packed with vitamin A and vitamin C. They are Mexico's most popular chile pepper, most commonly roasted, bringing out a smoky, vegetal flavor that pairs well with carnitas, stews, and makes as an excellent base for sauces.
